   I need to start by stating the fact that if I said "I have a sweet tooth" it would be a major understatement!!  I love sweets of all kinds....cake, cookies, pie, any dessert type really.  I have found this the biggest challenge while living a healthier lifestyle.  I do however realize that the few times I have caved and allowed myself to eat (insert dessert) that it made me feel absolutely lousy! I would have stomach aches, feel lethargic, and sleepy....not really what my body was needing.  Needless to say eating it wasn't an option, but neither was not eating it.  So today I set out to make not only one but two solutions and I am pretty pleased with myself if I do say so myself.  

Two different versions of a cake in a mug to choose from!! So if your like me and just need something to help curb your cravings but still keep you on track check out these recipes!


Fudgy Chocolate Shakeology Cake!!!!

This is a combination of chocolate cake and gooey brownie.....seriously you feel like your cheating on your diet!! This recipe is Super simple and with only a few ingredients you can make this too.

Ingredients:
  • 1 Egg White
  • 1 tsp Coconut Oil (melted)
  • 1 Scoop or Packet of Chocolate Shakeology
  • 4 Tbsp Almond Milk
  • 1/8 tsp Baking Powder
  • 1/8 tsp Baking Soda

Okay so once you are ready take a microwave safe mug and add your dry ingredients and mix.  Next take a bowl and whisk your egg white until its frothy and bubbly.  Add your almond milk and coconut oil to your egg and mix.  Add your egg mixture to your dry ingredients in the mug and mix until there you are sure there is no dry mix on the bottom on the mug.  Place mug in microwave and cook for 70 seconds.  If you overcook it your cake will still workout it just won't be ooey and gooey (maybe you don't want that either - in that case cook for an extra 15 seconds)

Take it out of microwave and let it cool for a few seconds so you don't burn your mouth trying to get that cake in your belly, but enjoy!!

If you want to jazz it up even more you can add a tsp of natural peanut butter to it before you microwave.


Lemon Vanilla Shakeology Cake

Honestly I didn't think I could make anything that could compare to the chocolate but this is so different that is just as good.  The lemon in this cake makes it taste like the lemon dainties my grandma used to make....Mmm!

Ingredients:

  • 1 Scoop or Packet of Vanilla Shakeology
  • 1 Tbsp Applesauce
  • 1 Tbsp Almond Milk
  • 1 tsp Lemon Juice
  • 1 tsp Lemon Zest
  • 1/4 tsp Vanilla Extract
  • 1/8 tsp Baking Soda
  • 1/8 tsp Baking Powder
  • Egg White

Same as with the Chocolate cake start out by adding the dry ingredients in your microwave safe mug.  Whisk your egg white in a clean bowl until frothy and bubbly.  mix into your egg the rest of the ingredients applesauce, lemon juice, almond milk, vanilla extract and lemon zest.  Mix lemon/egg mixture with your dry ingredients in your mug.  Stir until your sure its all mixed well and there is no dry powder on the bottom of the mug.  Microwave for 75 Seconds, be careful it will be hot when it comes out so let it cool for a few seconds before you did in!

Ginger Basil Beef Stir-fry

Ginger Basil Beef Stir-fry

  I really love stir-fry its one of my favorite things to make and eat!  Heck anything that I get to use chopsticks to eat just tastes better... Now I posted this pic on my Facebook and had requests to share the recipe with you guys so here it is.  This is a fairly pretty healthy recipe but its not quiet 21 day fix portions, but if you really wanted to I think you could make a few adjustments to make it approved.
Ingredients:

  • 6oz brown rice vermicelli noodles (this will probably be in the Asian section in your supermarket)  Make sure its brown if you are going for a healthy version.
  • Zest and juice of a lime
  • 1/4 C fresh orange juice
  • 3 tsp sesame oil or coconut oil
  • 3 Tbsp rice vinegar
  • 2 Tbsp reduced-sodium tamari (preferably organic)
  • 2 Tbsp raw honey (you can adjust to your own taste)
  • Olive Oil cooking spray
  • 1 1/2 lb beef sirloin, trimmed of fat and sliced thinly
  • 4 C carrots (I like to cut mine in matchstick to give the stir-fry look
  • 2 C halved grape or cherry tomatoes
  • 2 Tbsp peeled and chopped ginger
  • 6 green onions (white and green part) roughly chopped, I kept mine fairly large
  • 1/2 C fresh chopped basil
Instructions

1.  Fill a large saucepan about half full with water and bring to a boil.  Add in your vermicelli noodles and cook until al dente (this wont take long (about 2 minutes).  Drain and rinse noodles in a fine mesh strainer and set aside for now.

2.  In a small bowl whisk together lime juice, and zest, orange juice, oil, vinegar, tamari and honey: set aside.

3.  In a large skillet lightly spray with cooking spray and heat on medium high.  If you have a large enough skillet you can add all your beef, if its smaller do two batches.  Cook until brown and then transfer to another bowl.  Spray lightly again with spray and add carrots, stirring often until carrots are almost done (4-5 minutes).  Add ginger and tomatoes and cook for another 2 minutes.  Add vinegar mixture, once it starts to simmer return beef to skillet.  Heat for 1 minute.

4.  Add noodles and green onion to saucepan. Toss with tongs until combined. Turn off heat and add basil, continue to combine until well mixed.

5.  Enjoy with or without chopsticks! <3

Today is Sunday, and its raining and dreary....there seemed like no better time for pancakes than today!!  I have been following the clean eating meal plan that Autumn Calabrese has made that goes with the 21 day fix.  Needless to say the pancakes the old me would have made would not have fit into my meal plan, so I needed to find an alternative!  Not only are these SUPER simple to make the chances you have all the ingredients at home are pretty good....Because there are only 3!!!

Ingredients for these pancakes are;
  • Banana
  • 2 Eggs
  • Cinnamon

Peel banana and mash it up in a bowl. Next add the eggs and mix it up really well!
Sprinkle cinnamon into "batter" (I never measured I just went with looked like enough)




You will want to have you frying pan set to medium heat.  I spritzed the pan lightly with non-stick spray. Once the pan is ready pour your banana batter in the pan, it will look quiet runny but don't worry.  Now it will take a couple minutes before the pancakes are cooked enough to start to get a spatula underneath (I just kinda poked them around the edges to loosen them from the pan until I could tell they were sturdy enough to flip)


Once your pancakes are flipped it should only take another minute or two before they are done and golden brown!!

Once the other side is browned, plate them and enjoy!!!

I added just a tiny bit of Pure Maple Syrup to mine! (but you could add fresh fruit or even peanut butter to these if you like!!

21 Day Fix Approved "Buster Bar" Recipe

Okay so this is my very first time ever trying out this blogging thing, so please cut me slack I'm no pro!
I totally promised that I could be posting up my new "Healthy Version Buster Bar" recipe that is 21 Day Fix approved!! So here is my attempt at entering this crazy blogging world!

Summer Time is coming and I for one am a HUGE sucker for ice cream, I could seriously come up with any excuse to have it! Like oh its such a hot day - Time for ice cream! Oh its a great day at the lake - time for ice cream! I hate yard work day lets make it more fun with ice cream! (This is also the reason why I gained 60 lbs when I was pregnant.....yeah) Soooo  I really needed a way to come up with a solution that would fit into my meal plan and my new healthy lifestyle and this was my solution.  Frozen chocolaty fudgy topping and cold creamy vanilla middle with peanuts mixed in there too!!  MMMmmm I'm drooling just typing that.  But honestly not all my creations do work out so I was just a little nervous about these guys because I wanted them to work out SO bad! But when these bad boys were ready and came out of the freezer it was like Christmas!! Seriously no one could  believe how good this "healthy treat" really was!

So to start out I just bought a little Popsicle mold you can buy at any store this time of year I think I found mine in the seasonal isle in Walmart.  The ingredients you will need include:
  • Plain Greek Yogurt
  • Vanilla Extract
  • Spanish peanuts (you can use regular if you cant find Spanish just make sure these are UN-salted)
  • Unsweetened Almond Milk
  • Chocolate Shakeology (I will leave a link you can follow to order)
  • Honey
I started by mixing one scoop of chocolate Shakeology with 1/4 cup of almond milk.  This will make a really thick "pancake batter" type of mix and just evenly distribute it  between your 8 Popsicle  molds. I then fill my orange container with peanuts and split between 4 molds and repeat this to fill the other 4. (so I have used 2 orange containers of peanuts) Now it kinda helps if you tap the peanuts into the chocolaty fudge with the end of a wooden spoon just to make you Popsicle more solid.  Once that's done I fill my red container with Greek yogurt and dump it into a clean bowl I mix in 1 1/2 tsp of vanilla extract and 2 tsp of honey and mix it up.  Distribute the Greek yogurt mix evenly among your 8 mold again.  Once again fill two orange containers with peanuts and distribute evenly on top of the yogurt layer. Repeat step one and make another chocolate layer with Shakeology and almond milk to top of your Popsicles. Stick your handles into these and pop into the freezer!! Easy Peasy!! Wait a couple hours before trying to take these out of the molds... I know its hard but trust me it will be worth the wait.  Once they are solid I recommend running a little water over the bottom part of the mold just to make it easier to pop them out.
