I might be following the 21 Day Fix meal plan but I was really craving some creamy pasta....So I improvised (you have to bear with me) I know the recipe sounds a little "different" but it definitely is Dee-licious and super easy!!!!

I posted a picture of my supper on my Facebook and got a bunch of requests for the recipe, so here it is!!!

-Cooked Chicken Breast (2 Servings)
-Broccoli (2 Cups)
-Cottage Cheese (3/4 Cup)
-Fresh Garlic -diced (2 tsp)

-Almond Milk (3 Tablespoons)

1.  Boil water and start cooking your whole grain pasta, when noodles are el dente drain and rinse.
2. Take Cottage Cheese and 3 Tablespoons of almond milk and blend it in a food processor until smooth.
3. Place Cottage cheese mixture in a saucepan and add the parmesan cheese and garlic. Warm on medium heat until bubbly and creamy.
4. Meanwhile steam your broccoli.
5. Cut up your cooked chicken breast and portion.

-Portion out 1 or 2 yellow containers (depending on your meal plan) of pasta onto your plate(s).
-Place steamed broccoli and sliced chicken,  on top of pasta.

Zucchini Noodle Bowl

Yesterday for lunch I whipped up this super quick and easy Zucchini noodle bowl and posted it to my Facebook page.  I never really thought it would be such a hit so I never took pictures as I made it, but was asked to post the recipe so here it is.

I have a Spiralizer (makes vegetables into noodles) and that is what I used here. This is mine, from Paderno (surprisingly not as expensive as you would think)

Ingredients
  • Medium zucchini
  • Cherry tomatoes
  • Garlic
  • Fresh basil
  • Extra virgen olive oil
  • Lemon juice

I took a medium sized zucchini and spiralized it.  Is that even a word? I just made it up if it isn't lol.  Anyways I took about 1 1/2 green containers (21 day fix) or you could just take all of it. and another half green container of cherry tomatoes and put in a bowl.

Then in a small hand held blender (if your fancy you could use a food processor) I put a small bunch of fresh basil, two cloves of garlic 2 tablespoon on lemon juice, and a little bit of fresh black pepper and blended until it was like a sauce, then I added a tsp on oil and blended some more.

Toss with the zucchini and tomatoes and eat.

Super easy peasy and quick!

If you wanted you could add some fresh parmesan on top too just for a little extra kick!

If your following the 21 day fix this recipe would =

  2 Green
  1 tsp
