"Instant" Steel Cut Oatmeal



  Be prepared for your life to be changed!

  I have so many people tell me they aren't "morning people" and that they "don't have time for breakfast."  This makes me so sad, because breakfast really is the start of your day and it fuels how you will feel for the entire day.  Personally I have always been a breakfast person so its never been an issue for me.....until I became a mom and everyone else now comes first.  But I have found a solution!

  When I was a kid instant oatmeal was a classic breakfast in my house. You know the kind, the kind that come in individual packets and are jam packed full of sugar (so kids will eat it)  This recipe is different! (I promise - Easy Peasy -

I take steel cut oatmeal which will not give you a sugar high but keep you fuller longer with lasting energy!!! Take about a supercharged breakfast!!

Stay with me!! this is seriously the simplest recipe ever!!!

What You Need


  • Steel Cut Oats
  • Water
  • Large Muffin Tin
Make a large batch of cooked oats according to the directions.

I bring about 6 cups of water to a boil, and add 3 cups of oats and simmer until oats are thick and soft (you will cook different times depending on your oatmeal preference on how chewy and thick you like your oatmeal)

Now you might ask..."why am I making so much oatmeal?" 

I will tell you!

Take a oversized muffin tin and portion out your oatmeal into the cups. (if you are doing the 21 Day Fix one yellow container fit perfect into my oversized muffin tins)

Place plan in a level shelf in your freezer, and leave until froze solid.

When oatmeal is frozen remove from freezer and turn upside down and oatmeal should pop out of tin in formed pucks, if your pucks won't fall out run water on the bottom of the pan to loosen.

place pucks in a freezer bag and return to freezer until you want oatmeal


To Prepare

take an oatmeal puck out of freezer and place in bowl with water (I eyeball this to about a quarter cup) you can use more or less depending on the consistency you like your oatmeal.  

Microwave for 3 minutes

Stir to loosen puck and mix the heated water, into oatmeal.


Enjoy

 I like it just plain but If you like to add fruit or sweetener to your oatmeal you can do this to add extra flavour.  MMMmm energy!!!
