Ginger Basil Beef Stir-fry

  I really love stir-fry its one of my favorite things to make and eat!  Heck anything that I get to use chopsticks to eat just tastes better... Now I posted this pic on my Facebook and had requests to share the recipe with you guys so here it is.  This is a fairly pretty healthy recipe but its not quiet 21 day fix portions, but if you really wanted to I think you could make a few adjustments to make it approved.
Ingredients:

  • 6oz brown rice vermicelli noodles (this will probably be in the Asian section in your supermarket)  Make sure its brown if you are going for a healthy version.
  • Zest and juice of a lime
  • 1/4 C fresh orange juice
  • 3 tsp sesame oil or coconut oil
  • 3 Tbsp rice vinegar
  • 2 Tbsp reduced-sodium tamari (preferably organic)
  • 2 Tbsp raw honey (you can adjust to your own taste)
  • Olive Oil cooking spray
  • 1 1/2 lb beef sirloin, trimmed of fat and sliced thinly
  • 4 C carrots (I like to cut mine in matchstick to give the stir-fry look
  • 2 C halved grape or cherry tomatoes
  • 2 Tbsp peeled and chopped ginger
  • 6 green onions (white and green part) roughly chopped, I kept mine fairly large
  • 1/2 C fresh chopped basil
Instructions

1.  Fill a large saucepan about half full with water and bring to a boil.  Add in your vermicelli noodles and cook until al dente (this wont take long (about 2 minutes).  Drain and rinse noodles in a fine mesh strainer and set aside for now.

2.  In a small bowl whisk together lime juice, and zest, orange juice, oil, vinegar, tamari and honey: set aside.

3.  In a large skillet lightly spray with cooking spray and heat on medium high.  If you have a large enough skillet you can add all your beef, if its smaller do two batches.  Cook until brown and then transfer to another bowl.  Spray lightly again with spray and add carrots, stirring often until carrots are almost done (4-5 minutes).  Add ginger and tomatoes and cook for another 2 minutes.  Add vinegar mixture, once it starts to simmer return beef to skillet.  Heat for 1 minute.

4.  Add noodles and green onion to saucepan. Toss with tongs until combined. Turn off heat and add basil, continue to combine until well mixed.

5.  Enjoy with or without chopsticks! <3
